Determina莽茫o de vitamina C em batatas (Solanum tuberosum L.) submetidas a dois processos de industrializa莽茫o
Resumo
Foram determinadas as perdas de vitamina C em batatas submetidas a autoclavagem e a cozimento e congela莽茫o. Empregou-se batatas da variedade "Hansa" e determinou-se a concentra莽茫o, tanto do 谩cido L - asc贸rbico como tamb茅m da vitamina C total. As determina莽玫es foram feitas pelo m茅todo fotom茅trico, sendo a vitamina C total determinada atrav茅s de 2,4 dinitrofenil-hidrazina (DNPH) e o 谩cido asc贸rbico atrav茅s de 4 -metoxi-2-nitroanilina. Concluiu-se que a opera莽茫o de autoclavagem atrav茅s de aquecimento 茅 mais vantajosa que a opera莽茫o de congelamento. Abstract Losses of vitamin C were determined in potatoes which were autoclaved, or cooked and frozen. Potatoes of the variety "Hansa" were used for determination of concentration of L - ascorbic acid as well as total vitamin C. The determinations were completed using photometric methods. The total vitamin C was determined by the method of 2,4 dinitrophenol hydrazine and the ascorbic acid by the method of 4-methoxy-2-nitroalanine. It was concluded that the autoclaved process by heating has more advantage than cookingand freezing.Downloads
